Preheat the smoker/grill and once it is maintaining about 240°F, you are ready to smoke! Place your smoking wood of choice onto the coals. Place the turkey directly on the grate breast side up, or if you want to keep the smoker a little cleaner, you can leave the turkey on the baking sheet. If you are using a smoker that has multiple levels, you can place the bird on a rack to make it easy to transport it to the smoker and then back into the house once it’s finished. We recommend you place a pan on a lower rack to catch the syrup and turkey juices, as they will burn once they hit the diverter plate.

Cover the grill and cook until the temperature of the interior of the tri-tip reaches 120°F for a rare roast, 130°F for medium-rare and 140°F for medium. At this point the meat will take anywhere from 20 to 40 minutes to cook, depending on how hot your grill is, how well done you want it, and the size of the cut. Note that the interior temperature will continue to rise at least 5°F after you take the roast off the heat. Once the roast reaches temperature, remove it from the grill and let it rest, loosely tented with foil, for at least 10 minutes. Slice against the grain and serve. If you are using a gas grill with a top rack, I recommend placing the roast on that rack, with an aluminum tray on the bottom rack underneath to catch the fat drippings. If you are grilling on charcoal or wood, you may want to turn the roast over every few minutes, for more even heating.

Brisket Directions: Rinse the brisket with cold water then pat it dry with paper towels. Pour a small amount olive oil over the brisket and gently spread it around. In a medium skillet place cube of butter and 2 tablespoons of Cindy Lou’s Black Label, when melted add the onions and “sweat” them until soft and translucent. Take the onions out and set aside. Add to the butter mixture, one bottle BBQ sauce, ¼ cup apple juice and one cup of Beef Stock. Mix well.
